Ken's Crusted Salmon - So Easy
First make the crust mixture. In a bowl combine a few cloves of grated garlic, some whole grain mustard and some greek yogurt. Mix well. Let sit for a while. Stir occasionally.
Get a chunk of fresh salmon. Dry, rub down with olive oil and grind on some fresh pepper.
Place the salmon in a baking pan skin down. Then spoon the crust mixture over the salmon.
Broil for about 15 - 20 minutes depending on how well cooked you like your salmon.
Serve with freshly squeezed lemon.
Tech Notes:
Try adding additional items to the crust mixture. I like to add crushed pistachios.
Use a great quality olive oil if you can. It's a key ingredient not just a cooking oil.
