Ken's Poached Mushroom

Easy, healthy, fast, tasty.

Get a large Portobella mushroom.

Carefully remove the stem making sure not to damage the mushroom. Rinse both and dry. Then finely chop the stem and place in a bowl.

Finely chop some shalott and a few garlic cloves and add to the bowl.

Add a small splash of fine olive oil. Add a pinch of salt, some fresh ground pepper and a pinch of paprika. Mix well.

Pour some olive oil on your hands and massage all over the outside of the mushroom.

Place in a casserole pan, add the stem mixture, some chicken broth and some white wine. Then bake in the oven at 350F until all is nice and golden brown.
