Ken's Bone Soup

Bone soup? Is this a joke?

No, it's dirt cheap and highly nutritious. More people should know about this amazing food.

Ask your butcher for some shank bones. Or any cross cut bones. They will give them to you for free, or for very low cost.

Place the bones on a baking tray. Add a splash of olive oil and mix all the bones in the oil. Sprinkle with garlic power, fresh ground pepper, a pinch of salt and a pinch of paptika. Broil in the oven until brown.

Slice some fresh garlic, celery, carrots, ginger and onions and saute in olive oil in a casserole.

Add the bones, chicken stock, white wine, water and your favorite fresh herbs. Then simmer with the lid on for a while. Add liquid if needed to stop burning. Make sure all the marrow comes out of the bones. Push it out if necessary, this is the incredibly nutricious part of the soup.

Tech Notes:
As with all cooking the quality of the ingredients is critical. Buy the best you can afford.
Most butchers have no use for bones and throw them out. This why you can get amazing deals.
