Ken's Amazing Skirt Steak
Skirt Steak is a cheap cut. But this recipe elevates it to amazing.
Take a skirt steak and pound it thin with a meat hammer.
Rub it with olive oil. Then grind on some fresh pepper and a pinch of salt. Now cover it in freshly chopped garlic.
Add some chopped parsley and a light sprinkle of grated real Italian Parmigiano Reggiano cheese.
Now roll it up into a tight tube.
Push a few wood skewers through it to hold it together.
Grill, cut into pieces and serve.
If you can grill over real hardwood then so much the better.
Tech Notes:
Use good quality oilve oil.
Real Italian cheese makes a difference.
Grilling over real hardwood is well worth it. I hate gas grills and I hate brickettes. But if you do have one of these try throwing on some hardwood chips. Amazon has a nice selection.
