Ken's Garlic Noodles
Fast, tasty and intense garlic.
Let's do it like top restaurants do it.
Boil some egg noodles. Make sure they are slightly undercooked.
Melt some butter with olive oil in a pan and stir in some crushed and finely chopped garlic. Saute briefly. Be careful not to burn.
To crush garlic just place the flat of you knife on it and then slam to crush. Then chop fine. Then crush again. Crushing garlic releases the oils so important for intense garlic flavor.
Now add a splash of oyster sauce and a splash of soy sauce and some water from the noodle pot. Mix well.
Add the noodles. Cook for a minute, toss well and serve.
Tech Notes:
The water from the noodle pot is critical. Chefs love this because it's starchy.
If you don't like egg noodles try other noodles or pasta. Orzo works well.
Some people like to add a sprinkle of grated parmesan cheese just before serving.
