Ken's Stuffed Mushrooms

Easy, healthy, fast, tasty.

Get one large Portabella mushroom for each person you're serving. Then here's what you do for each mushroom.

Carefully remove the stem making sure not to damage the mushroom. Rinse both and dry. Then finely chop the stem and place in a bowl.

Finely chop some shalott and a garlic clove and add to the bowl.

Add a small amount of your favorite ground meat. Add a small splash of fine olive oil. Add a pinch of salt, some fresh ground pepper and a pinch of paprika. Mix well.

Pour some olive oil on your hands and massage all over the outside of the mushroom. Now fill the inside of the mushroom with the mixture from the bowl. Sprinkle with a bit of grated parmesan cheese.

Bake at 350F untill all is nice and golden brown.
