Ken's Carrots
Get some carrots from a farmers market, or maybe your own.
Slice them lengthwise so each carrot is two pieces.
Now rip off a large piece of aluminum foil.
Place the carrots on the foil and curl up the sides. Add a splash of fine olive oil. Add fresh chopped garlic. Add salt and pepper. Add your favorite herb. Add a splash of white wine and a splash of chicken stock. Add a small piece of butter. Add a pinch of paprika.
Close the aluminum foil tight. Place on a baking tray and bake at 350F for about on hour.
Serve. Eat alone or as a side dish for almost anything.
Bonus. No pots to clean!!!!!
Tech Notes:
Cut the greens off the carrots, but leave a bit. It adds taste.
This is not limited to carrots. Try it with your favorite vegetable or meat or fish. If you use fish add some lemon juice before sealing the package.
