Ken's Baba Ganoush
Baba Ganoush is a dish made from Eggplant. Think Hummus, but eggplant instead of chickpeas. Here's how you make it.
Take an eggplant and slice in half lengthwise. Brush all over with olive oil, add some garlic powder, pepper, salt and pakrika. If you like extra garlic add some grated fresh garlic. Gently press all ingredients into the eggplant. Then bake at 450F with the sliced side up until the eggplant collapses.
Take out of the oven, let sit for a few minutes, then scoop all the flesh out of the eggplant leaving the skin behind.
Place the flesh in a bowl. Add a small splash of olive oil, some lemon juice, some tahini and then stir until it’s incorporated.
Transfer to a serving bowl and sprinkle with fresh chopped parsley.
Serve as a wonderful side dish. It’s also great as a spread on sandwiches!
Tech Note:
If you want it extra smooth and creamy then after you've scooped out all the flesh from the eggplant force it through a sieve. This will leave the lumpy parts behind. But I never do this because I don't want a sieve to wash. I'm lazy.
