Baked Peppers - Mellow Secret
Grab some red, yellow and orange peppers. Buy organic or farmers market if possible.
Don't use green peppers, they tend to be bitter.
Rub all over with olive oil then sprinkle with salt, pepper and garlic powder. Bake at 350F until the skin goes brown or even black. This will take a while.
Remove from oven and let sit for a few minutes to cool.
Peel off all the skin. Chop the peppers into pieces, sprinkle with pepper, salt and garlic power. And a pinch of paprika. Add a splash of white wine and chicken stock. Not a lot. Return to the oven to bake for just a few minutes. Be careful not to burn.
Serve.
